I’m sure that even our Neanderthal and Cro-Magnon ancestors knew the tastiest parts of the animals that they hunted. For those of you that don’t know or are raising your own game or livestock and have never had the opportunity to butcher. An animal, hands-on in my opinion is always the best but it’s good to study books and watch videos to get a better understanding of the best way to process an animal into edible portions.
