This thread is to post about nutrients, medicinal values, etc for the food items we grow as well as for other plants that may be of great value to us in the future.
Hopefully i can figure out how to pin this to the top, and sub thread the different items from there.
 
Nutrient profiles are ballpark estimates at best (for folks who aren't aware). Nutrient density has a lot to do with the soil fertility the plant grows in, and the soil microbiome that is present.

A lot of the foods tested have also been sitting for some time, and many of the nutrients have degraded over time, or even degrade as a result of the testing process.

If you are growing your own, you are properly managing your soil, and your are growing heritage varieties developed for flavor and nutrition rather than shipability and shelf life, then you can expect significantly higher values.
