I’m sure that even our Neanderthal and Cro-Magnon ancestors knew the tastiest parts of the animals that they hunted. For those of you that don’t know or are raising your own game or livestock and have never had the opportunity to butcher. An animal, hands-on in my opinion is always the best but it’s good to study books and watch videos to get a better understanding of the best way to process an animal into edible portions.
 
I have this book as a physical reference. I find that the bigger the animal, the more complicated the butchering is when you get down to the actual cuts.

There used to be a good reality TV show where butchers would compete in breaking down an animal into cuts. Learned a lot about technique watching it.
